Eating Green for St. Patrick’s Day

I’m sure you know that today is St. Patrick’s Day, but did you know that March is National Nutrition Month? If you forgot to wear green today, don’t let yourself get pinched! Make it up by eating something green!

To celebrate both St. Paddy’s Day and National Nutrition Month, I’ve put together a list of healthy, green recipes to have you eating green all day long. From a breakfast smoothie to a dinner of spinach soup, everything is planned out for you to flood your body with greens!

For breakfast: a green smoothie! (who didn’t see that one coming?)

There are many ways to make a green smoothie, and many recipes out there that claim to have done it best. However, a green smoothie is really about what sounds good to YOU. Choose a few green ingredients and throw them together! Here’s my favorite combination:

Breakfast: Green Smoothie

  • 1/2 avocado
  • kiwi
  • handful of spinach or kale
  • banana
  • almond milk
  • vanilla protein powder (optional)

Blend all ingredients together and enjoy! I love a good green smoothie to wake me up in the mornings. It feels great to start my day with so much nutrition!

Moving on to lunch… it’s time for a salad!

Lunch: Detox Salad

I love this detox salad recipe from Eat at Home. The recipe uses a bunch of different vegetables, like kale, broccoli, and carrots, to make sure you’re getting a ton of good nutrients! But don’t worry, the salad is made up of more than just veggies! Sunflower seeds, dried berries, and a little bit of maple syrup combine to make this a light, delicious, and slightly sweet salad. Yum!

Now, depending on how much salad you eat, you may get hungry again before dinner. Let’s make the perfect green snack: guacamole! I’ve been making this guacamole recipe for years, and I always get compliments on it!

Snack: Guacamole (and chips!)

  • 2 avocados
  • 1 roma tomato
  • 1/2 red onion
  • cilantro
  • lime juice
  • salt

Mash up the avocados in a bowl. Dice up your tomato and onion and stir them into the avocado. Add lime juice and salt to taste. Chop up a little cilantro and sprinkle it on top.

*If you like a spicier guacamole, you can also add some chopped jalapeno.

Enjoy with your favorite tortilla chips!

Alright, moving on to dinner… let’s make some soup! I love a nice hot soup to warm me up on chilly days.

Dinner: Spinach Soup

This gorgeous green spinach soup from The Spruce is everything a soup should be. Made with a chicken broth and milk base (I substituted almond milk), it’s nice and creamy. All the ingredients are blended together to make a nice thick soup. Even though the color makes it look like there’s nothing but spinach in there, you’ll also be eating potatoes and onion for a well-rounded comfort-soup flavor.

I just discovered this spinach soup recipe earlier this month, and it’s already one of my favorites! I love that I can eat a delicious soup and also get so many good nutrients from the spinach!
